Cool Cucumber Dill Salad & Tuna Cake


Whoohoo, two recipes in one!   With it actually feeling like spring this week, yes with the rain, I was looking for something light and refreshing. I’m sure I’ve told you all this before, my favorite kitchen gadget is my spiraler.   I recommend everyone go out and grab one today!  I got my here.  It’s priced really well and has three options for spirals.  Plus it magically appears on your front step.   Today I tried cucumber and it worked really well.  Just don’t use as much pressure as you would a zucchini.

This crisp, fresh, cool salad could go with anything really.  I felt like keeping lunch light today and made up a quick no bake tuna cake.  Both are super easy and super yummy!

Cool Cucumber Dill Salad & Tuna Cake

For Cool Cucumber Dill Salad
  • 1 large cucumber, spiraled
  • 2 tbsp homemade mayo: Try this recipe from NomNom Paleo
  • juice of ½ lemon
  • ½ tsp dried dill
  • pink himalayan salt & pepper to taste
  • pinch dried mint
For Tuna Cake
  • 1 can white tuna, drained
  • juice of ½ lemon
  • 1 green onion, chopped
  • ¼ c bell pepper
  • 1 small garlic clove, minced
  • pink himalayan salt & pepper to taste
Cool Cucumber Dill Salad
  1. Spiral your cucumber and place in a medium sized bowl.
  2. In a small bowl mix mayo, lemon, dill and salt and pepper.
  3. Cover cucumber with the dressing and mix. Set aside.
Tuna Cake
  1. Drain water from tuna. Place in bowl.
  2. Add green onion and pepper to tuna.
  3. In a small bowl mix lemon, garlic and salt and pepper.
  4. Add dressing to tuna and mix.
  5. To make the cake you can compact into a small bowl or use a ice cream scoop.
