Quick Roast Beef

  • 1-2 lbs round beef roast
  • 2 c bone broth (beef broth)
  • 6 garlic cloves
  • 4 carrots, chopped
  • 1 small yellow onion, chopped
  • 1 c mushrooms, chopped
  • 2 c watermelon radish, or any other root veggie
  • salt and pepper to taste
  1. Add onion to slow cooker (4.5 qt.).
  2. With a sharp knife make six small slices in roast to insert the garlic.
  3. Top with salt and pepper.
  4. Place roast in slow cooker.
  5. Surround roast with carrots, mushrooms and root veggies.
  6. Add bone broth.
  7. Cook on high for 4-6 hours or low for 6-8 hours.
  8. Remove beef and let sit for a few minutes, then slice.
  9. Serve with veggies.
