Kabocha Breakfast Hash


I’m always looking for a quick alternative to eggs or a shake in the morning.  I rather not get the sideways glances from people when I eat leftover dinner for breakfast 😉  You can cook this breakfast hash up on Sunday and eat from it all week!  Why did I use Kabocha squash you ask?  The name of course, but it does taste delicious!

  • 1 lbs ground turkey
  • ½ yellow onion
  • 2½ c Kabocha Squash, shredded
  • 1 tbsp coconut oil
Spice blend
  • 1 tbsp paprika
  • ½ tsp cayenne
  • 1 tbsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp thyme
  1. In a large skillet heat coconut oil over medium-high.
  2. Add onion, cook until translucent.
  3. Add turkey, cook until brown.
  4. While the turkey is cooking remove skin and seeds from squash and shred in food processor.
  5. Add 1½ tbsp of spice mix to the turkey.
  6. Add squash to turkey and cook for approximately 5 min.
  7. Top with fresh chives or any fresh herbs you have on hand.
Substitute: Any squash or any ground meat.
