It’s watermelon season! I’ve been dreaming of this salad since retreat. While I was away in May we stopped for lunch before getting to the retreat center. I had an amazing grass fed burger and watermelon salad. This is my take on that fresh, mouth-watering salad.
Are you wondering how to pick a juicy watermelon. Just look for the heaviest melon for it’s size. That means it’s jammed packed with juice!
- ¼ watermelon, chopped, rind removed
- ½ c fresh mint, chopped
- ½ c goat feta, chopped
- 1 tbsp balsamic vinegar
- 1 tbsp maple syrup
- In a small bowl whisk together balsamic vinegar and maple syrup.
- Add watermelon, mint and goat feta together in a large bowl.
- Drizzle with dressing.
